Turkey, Asiago and Spinach Frittata

This is a delicious way of using up your leftover Thanksgiving turkey! Recipe courtesy of Canadian Living magazine.

Ingredients:

1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 ½ tsp chopped fresh thyme
4 C lightly packed fresh spinach
8 eggs, whisked
¼ C milk
¼ tsp each salt and pepper
1 C chopped cooked turkey
½ C lightly packed grated Asiago cheese

Method:
• In 10 inch ovenproof skillet, heat oil over medium heat; cook onion, garlic and thyme, stirring occasionally, until onion is softened and light golden, about 5 minutes.
• Add spinach; cook, stirring, until wilted, about 2 minutes.
• Meanwhile, in a bowl, whisk together eggs, milk, salt and pepper; stir in turkey and half of the Asiago cheese.
• Pour over spinach mixture; reduce heat to medium low.
• Cook without stirring, until bottom and edge are set but top is still slightly runny, about 10 minutes.
• Sprinkle with remaining Asiago cheese.
• Broil until top is golden and set, about 3 minutes. Let rest for 3 minutes.
• Remove from skillet; cut into wedges.

Makes 4 servings; count each serving as 3 proteins.
