Sausage and Broccoli Skillet

An easy and tasty dinner! Ingredients: 1 large head of broccoli 1 tablespoon extra-virgin olive oil 1 pound Italian hot or mild sausage, in crumbles or small pieces Directions: Cut the broccoli into bite-sized florets. Chicken Zoodle Soup

This delicious low-carb version of comforting chicken noodle soup will keep you warm as we head into cooler weather! Ingredients 2 tablespoons avocado oil or olive oil 1 cup onion 3 cloves minced garlic 1/2 cup carrots (diced) 8 cups chicken broth 2 cups kale (stems removed, chopped) 2 tbsp rosemary 8 ounces spiralized zucchini noodles (or konjac noodles i.e. NuPasta) 1 teaspoon salt 1/2 teaspoon pepper 2 cups cooked chicken chopped or shredded 2 tbsp lemon juice Instructions Heat oil over medium heat in a large Dutch oven. A delicious, hearty casserole that could be paired with cauli- or broccoli-rice or eaten on its own. Adding a sprinkle of Parmesan cheese and more hot sauce before eating really enhances the flavour!
