Office Re-opening June 15

We are excited to announce that our clinic will be re-opening the week of June 15, 2020, for anyone interested in coming for in-person appointments.  We will continue virtual and telephone appointments during this time as well.  Many patients have felt more comfortable having appointments from home, and these remote appointments allow for less commute time and less risk of exposure.  As of June 15th, our clinic will be offering either type of appointment (remote or in-person), for new patients, current patients, or returning patients.  We will have strict protocols in place to protect the safety of our staff and [...]

Crispy Zucchini Fries

These delicious crispy fries are a great substitute for the potato version!  One of our clients passed this along, and said it turned out great.  Original recipe from: www.wholesomeyum.com.  Ingredients 2 medium zucchini ¾ cup grated parmesan cheese (or if you have the pre-grated, shake-bottle parmesan, that’s fine too!) 1 large egg ¼ tsp garlic powder (or garlic salt) ¼ tsp black pepper Directions Preheat oven to 425 degrees F (218 degrees C). Rarely do I like talking about my habits or frustrations with my eating; however, I wanted to share some of my personal reflections. Three years ago, I was diagnosed with prediabetes; a total surprise to me. I did not believe my doctor and the blood results, so had a nurse test me at the hospital. Yep, elevated blood sugars. Philly Cheesesteak Stuffed Peppers

Spaghetti Squash Lasagna Boats

INGREDIENTS: Spaghetti Squash -1 medium Spaghetti squash -2 tbsp olive oil for brushing -salt/pepper to taste Meat Layer - 1 tbsp Olive oil (divided) - 2 cloves Garlic - 1 lb Ground beef - 1/2 tsp Sea salt - 1/8 tsp Black pepper (or more if you like it spicy) - 1/2 cup Marinara sauce (ideally no sugar added) - 1 tsp Italian seasoning Cheese Layers -2/3 cup Ricotta cheese or cottage cheese (whole fat or 2%) -1/3 cup grated Parmesan cheese -1 tbsp Olive oil -salt, to taste -2/3 cup Mozzarella cheese (shredded, divided) DIRECTIONS: Spaghetti squash Preheat oven to 400-F.
