Refreshing Watermelon & Cucumber-Mint Salad   Watermelon makes this salad cool and refreshing on a hot summer’s day.  Choose a melon that is long; it provides a good-size serving bowl for the finished creation!  Ingredients 1 medium-size watermelon, preferably seedless 6 green onions ¼ cup (50 mL) coarsely chopped fresh mint leaves 2 English cucumbers (50 mL) each balsamic vinegar and olive oil (5 mL) each salt and ground black pepper Directions Slice watermelon lengthwise, cutting off top third.
