1 cup chopped walnuts
1 cup unsweetened shredded coconut
2 tbsp coconut oil
3 tbsp unsweetened cocoa powder
1 tsp vanilla extract
1/4 tsp peppermint extract
1/8 tsp salt
2 ounces Lily’s Chocolate Chips
1 sugar free candy cane

Place the walnuts, shredded coconut, coconut oil in a food processor and pulse to form a chunky paste.
Add the remaining ingredients to the food processor and pulse to form a thick dough.
Scoop the dough into 1 inch balls, rolling each smooth with your hands.
Place the rolled energy balls on a flat sheet tray then drizzle with the melted dark chocolate. Sprinkle the crushed candy cane over the balls.
Let the chocolate harden and then enjoy!

Makes 8 balls; count each as 4 fat servings
