These delicious taco bites are great with a salad, or wrapped in lettuce with avocado and salsa! They are also tasty when eaten between two cucumber rounds. They freeze well and can be reheated for a quick meal or snack!


  • 1 pound ground beef or turkey

  • 4 ounces cream cheese, softened

  • 1/3 cup coconut flour

  • 1/2 teaspoon baking powder

  • 2 tablespoons taco seasoning

  • 3 eggs, beaten

  • 1 1/4 cup shredded cheese (cheddar, pepper jack, mozzarella work great)


  1. Preheat oven to 350 degrees

  2. Combine cooked meat and cream cheese until completely combined.

  3. Add in remaining ingredients and chill 15 minutes.

  4. Drop onto a greased baking sheet (I like to use the silicone baking mats) using a small cookie scoop.

  5. Bake 18-20 minutes until golden brown.

  6. Makes approximately 30 bites.  


Makes about 30 bites. Count 3 bites as: 2 protein (group 6) and 1 fat (group 7).
