Ingredients

1 cup almond flour

3/4 cup heavy whipping cream

1/2 cup fresh strawberries

1/2 cup powdered erythritol (or powdered sweetener of choice)

8 oz cream cheese, softened

4 tbsp butter

Instructions

  1. Melt butter and mix with almond flour
  2. Spread the almond flour mixture evenly into the bottom of a 5×7 pan and press down with a fork, spoon, or spatula
  3. Using a high-speed blender, blend the strawberries into a puree
  4. Whip the heavy whipping cream, cream cheese, powdered erythritol, and strawberry puree together with a hand mixer or whisk until thick
  5. Scoop onto the crust, distribute evenly, and place into the refrigerator
  6. Chill for at least one hour before serving!
