A hot breakfast can be just five minutes away with this frittata. Change up the add-ins to suit your mood or use whatever veggies are in the fridge. Top with salsa or guacamole if desired!

2 eggs
Pinch each salt and pepper
½ cup baby spinach, chopped
2 tbsp shredded Cheddar cheese
1 tbsp chopped green onions

1. Grease large mug with non-stick cooking spray; whisk together eggs, salt and pepper. Stir in spinach, cheese and green onions.
2. Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.

Serves 1, count as 2.5 proteins.
