Ingredients:

4 salmon fillets with skin (6oz each), rinsed and patted dry
? cup sour cream
2 ½ tablespoons of your favourite mustard
1 ½ teaspoons fresh lemon juice
2 small garlic cloves, minced
½ tsp lemon pepper

Method:

• Pre-heat the broiler. Line a baking sheet with aluminum foil, and lightly grease with cooking spray or oil.
• Place the fish (skin side down) on the baking sheet.
• In a small bowl, stir together the remaining ingredients. Spread over the top and sides of the fish.
• Broil 5 – 6 inches from the heat for 10 – 12 minutes, or until the fish is cooked to the desired doneness.

Makes 4 servings; count each serving as 3 proteins and 1 fat.
