Parmesan- Baked Fish

A quick, easy and delicious way to prepare fish!

Ingredients

• 4 four-oz fresh or frozen skinless salmon fillets or other firm fish fillets, ¾- to 1-inch thick
• Nonstick spray coating
• ¼ cup light mayonnaise dressing or Kraft low-calorie Italian dressing
• 2 tablespoons grated Parmesan cheese
• 1 tablespoon snipped fresh chives or sliced green onion
• 1 teaspoon white wine
• Fresh chives (optional)

Directions

1) Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Spray a 2-quart square or rectangular baking dish with nonstick coating. Set aside.

2) In a small bowl stir together mayonnaise dressing or salad dressing, Parmesan cheese, the 1 tbsp of snipped fresh chives or sliced green onions, 1 teaspoon white wine. Spread mixture over fish fillets.

3) Bake, uncovered, in a 450-degree oven for 12 to 15 minutes or until fish flakes easily when tested with a fork. If desired, garnish with additional fresh chives. Makes 4 servings.

AMAZING and so simple to make!! We had guests over for dinner and served this with wild rice, asparagus, and salad. I got the comment from my friends husband " This is way too good for diet food". :)
