Hamburger Soup

This deliciously hearty soup is very filling and perfect for a cold day!
Ingredients
- 1 1/2 lbs lean ground beef
- 1 medium onion - finely chopped
- 1 28-oz can diced tomatoes
- 2 cups water
- 3 cans beef consomme
- 1 can low fat tomato soup
- 4 carrots, finely chopped
- 1 bay leaf
- 3 stalks celery, finely chopped
- 8 tablespoons barley
Instructions
- Brown meat with onion, drain well.
- Combine all ingredients in a large pot.
- Cover and simmer at least 2 hours.
Notes
Makes 12 servings.
Exchanges: Count each serving as: 2 protein (group 6) ½ carbohydrate (group 5)
