Light Waldorf Salad

A tasty light version of the famous Waldorf Salad.

Ingredients

1 cup (250 mL) diced celery
1 cup (250 mL) diced crisp apples
½ cup (125 mL) coarsely chopped walnuts
½ cup (125 mL) seedless red grapes, halved
For the dressing:
½ cup (125 mL) unsweetened, low-fat plain yogurt (could use vanilla)
1 tablespoon (15 mL) lemon juice

Instructions

In a small bowl, combine dressing ingredients and mix well. In a large serving bowl, place all salad ingredients; toss with dressing and refrigerate until ready to serve.

Notes

Makes 4 servings.Count each serving as 1 fruit (group 4) and 1 fat (group 7).
