Salmon Chick Pea Salad

An easy, portable lunch salad.

Ingredients

1 can (170g) salmon or tuna, drained
1¼ cup chick peas, drained and rinsed
1 cup cherry tomatoes, chopped
1 sweet yellow pepper, half diced, half cut into rings
¼ cup low fat Italian dressing

Preparation

Toss together the salmon, chick peas, tomatoes, diced pepper and dressing. Garnish with pepper rings. Serve on its own or over top of your favourite greens.

Notes

Makes 2 servings, count as 3 proteins

Can whip this recipe up very quickly. I substituted tuna for the salmon and it was delicious! Great to pack for a lunch.

Very easy to make. Could add a bit more flavour though. Maybe some onion?
