Slow Cooker Ham and Bean Soup Recipes

Two slow cooker soup recipes that are an excellent way to use your leftover ham!

Split Pea Soup or Navy Bean Soup

Ham bone (optional)
2 cups dried split peas or dried navy beans
6 cups water
2 chopped carrots
1 large onion, chopped
1 tsp. thyme (optional)
1 tsp. basil (optional)
Salt and pepper to taste
Roughly 1 cup leftover ham (optional)

Rinse peas thoroughly. Combine all ingredients.

In a crock pot, cook on low 8-10 hours. Remove bone from soup (if used). Cut up ham. Add chopped ham to soup.

Mixed Bean Soup

Ham bone (optional)
1 pound dried mixed beans
1 can crushed tomatoes
1 large onion, chopped
4 cups of water
2 stalks celery, finely chopped
2 carrots, finely chopped
3 cloves garlic, finely chopped or pushed through garlic press
1 tsp. basil (optional)
Salt and pepper to taste
Roughly 1 cup leftover ham (optional)

Rinse beans thoroughly. Combine all ingredients.

In a crock pot, cook on low 8-10 hours. Remove bone from soup (if used). Cut up ham, add chopped ham to soup.

Notes

Each soup makes about 8 servings.

Count each serving as 2 servings of protein.
