Spicy Chicken Stir Fry with Peanuts and Pineapples

The contrast of flavors makes this stir fry delicious!

Ingredients

¼ cup Asian Sesame Dressing (recommended: Kraft)
3 cups frozen stir-fry vegetables (carrots, red peppers, snow peas), thawed and drained
¾ tsp hot pepper sauce (or more if you it really spicy)
1 lb. boneless skinless chicken breasts, cut into thin strips
1 can (14 fl oz) pineapple chunks in juice, drained
¼ cup peanuts
2 cups hot cooked long-grain brown rice

Cooking Directions

Heat dressing in large nonstick skillet on medium-high heat. Add vegetables and hot sauce; stir fry 1 minute. Add chicken; stir-fry until the chicken is done, about 5 minutes.

Stir in pineapple and nuts cook 5 minutes or until heated through, stirring occasionally.

Serve over rice.

Notes

Makes 4 servings

 Count each serving as 3 proteins (group 6), 1 starch (group 5), 1 fruit (group 4), and fat (group 7)

Tip- top with thinly sliced green onions for extra flavor and spice
