Mediterranean Ricotta, Feta and Spinach Pie

Not having a crust to mask the taste of the filling, allows the mediterranean flavours of this quiche to shine through!

Ingredients:

1 bag of fresh spinach, cooked
1 Tbsp dried bread crumbs
1 cup of fat reduced ricotta cheese
 3 large eggs
½ cup of 2% milk
¹/3 cup crumbled feta cheese
¾ tsp minced garlic
½ tsp salt
¼ tsp ground black pepper
pinch of grated nutmeg

Directions:

1) Preheat oven to 350°

2) Allow spinach to cool. Lightly squeeze out liquid and coarsely chop.

3) Lightly coat a 9” pie dish with cooking spray. Sprinkle with bread crumbs to coat.

4) Beat together remaining ingredients with a wooden spoon. Stir in spinach.

5) Pour into pie dish. Bake for 35 minutes. Let stand for five minutes then cut into 8 portions and serve.

Makes 8 servings.

Great recipe idea. We usually need 3 proteins for a meal so I changed the recipe so it yielded 12 total proteins and then divided it into 4 servings. I used 6 eggs, 3/4 cup light ricotta, and 90oz light feta. I left the milk at 1/2 cup. I sauteed a small onion with the garlic and then added that to the mixture before baking it. I omitted the breadcrumbs and used a spray of pan to keep it from sticking. I agree with the other person that you don't need to add much more salt since the feta is pretty salty. Enjoy! :)

Made this recipe and absolutely loved it .Had 2 servings( 2 protein ) and it made a lovely lunch . I would give this recipe more than a 5 !!!!!!!

I made this and it was quite tasty but found it a bit salty, as the feta cheese is salty so do not add extra salt; also, the combination is indeed very nice...but I found that it was a bit too much spinach for this recipe, perhaps it is only my taste, though... next time i will make a bigger pie with more eggs and the same amount of spinach.
